3 tbsp coconut flourā €

1/3 cup sweetener (@lakantomonkfruit)ā €

1 eggā €

1/2 tsp baking powderā €

1/4 cup lemon juiceā €

1/4 cup oil coconut oil, meltedā €

1 Lemon zestā €

1/4 cup blueberries ā €

Toppings:ā €

Lemon glaze : 3 Tbsp powdered sweetener (@lakantomonkfruit) + 1 Tbsp plant based milk + 1 tsp lemon juiceā €

ā€¢Preheat oven 350 F / 176 Cā €

ā€¢In a mixing bowl, add the egg, coconut oil, lemon juice, sweetener and whisk.ā €

ā€¢Add the lemon zest, almond flour, coconut flour, baking powder, whisk well until soft batter starts to form.ā €

ā€¢Form the cookies with your hands and place them in a baking tray. Flatten the cookies and give them the desired shape.ā €

ā€¢Bake for 10-15 min until golden outside.ā €

ā€¢Allow them to cool down and drizzled with lemon glaze and sparkling with lemon zest.ā €
