Apricot Cobbler

Ingredients:

•5 apricots (you can use any kind of berries, peach..)

•2Tbsp monk fruit sweetener (Lakanto)

•2 tsp monk fruit sweetener , to sprinkle

•1 cup almond flour

•2 tsp Baking powder

•1/3 cup coconut oil,melted

•1 large egg

•1 tsp vanilla

•1 tsp lemon zest

•4Tbsp Rum (optional)

•Vegan vanilla Ice cream


Instructions:

1.Preheat oven 375 F.

2.Cut the apricots in half and soak them in 4 Tbsp of rum.

4.In a bowl add 2 Tbsp of monk fruit, almond flour, baking powder,melted coconut oil, egg,vanilla, lemon zest, and then 3 or 4 Tbsp of rum that you used for the apricots .Mix everything.

5.Pour the batter in a 8 inch oven proof frying pan or any baking pan, then place the apricots over the mixture on the top and sprinkle with 2 tsp of monk fruit. Bake for 25 min until is puffed and golden.

6.Let it cool for 10 min and top with ice cream.

•5 chabacanos ( pueden usar cualquier tipo de frutos rojos,durazno..)

•2 cdas de edulcorante monk fruit (Lakanto)

•2 cdtas de edulcorante monk fruit para espolvoreaar

•1 taza de harina de almendra

•2 cdtas de polvo para hornear

•1/3 taza de aceite de coco, derretido

•1 huevo

•1 cdta de vainilla

•1 cdta de ralladura de lima

•4 cdas de Ron(opcional)

•Nieve de vainilla vegana
